WHAT IS IT?: Sweeter than a summer squash, the acorn squash has a nutty flavor and is quick and easy to prepare.

HOW TO USE: Baked squash can be used in everything from pasta to pies. Try slicing squash crosswise into �-inch slices. Cut out seeds from each ring and discard. Place squash rings on greased baking sheet. Dot rings with butter and sprinkle with brown sugar. Salt if desired. Bake at 350 degrees for 15 minutes. Flip rings, add more butter and sugar and bake until tender (about 10 more minutes).
